This is a desi spicy recipe which is very famous in North India and a perfect accompany of rice meal or any Indian bread. I like this dish very much hope my experience will help you making this.
1.small or medium sized brinjal(5 to 6)
2.roasted coriander seeds blended with red 2 chillis
3. 2 onion paste
6.1 green chilli
How to make it-
First, wash the brinjal and cut into four pieces without separation it from the stem (should be attached).then mix some oil and water to the coriander chili powder and 70% of the paste for stuffing the brinjal.Then add 2 tablespoons of oil. to the pan and add cumin seeds and one green chili and add the onion paste, remaining coriander paste and fry it for 5 min.Then add the brinjals and potato pieces into the pan .add salt tomatoes without cutting them and cover it with a lid. (I have cooked it in the microwave for 10 min instead you can cook in the pan also if you don’t use the microwave).Check in between till it gets cooked.Serve it hot with Roti or Rice meal.
